Maritati are a typical Apulian fresh pasta format. They are so called because they are born from the union of orecchiette and maccheroni.
They are made with carefully selected durum wheat semolina.
The ideal dressing is the traditional Apulian one: fresh tomato, basil and salted ricotta.
Ingredients: durum wheat semolina, water.
Cooking time: 5/7 minutes.
