Orecchiette is a traditional pasta shape from southern Italy.
For the whole wheat version, a portion of whole durum wheat semolina is added to the durum wheat semolina.
Ideal with tomato and olive sauce or with turnip greens and sausage.
Ingredients: durum wheat semolina, whole durum wheat semolina (30%), water.
