Orecchiette are a traditional pasta shape from southern Italy.
To make the wholemeal version, a part of whole durum wheat semolina is added to the durum wheat semolina.
Ideal with tomato and olive sauce or accompanied by turnip greens and sausage.
Ingredients: durum wheat semolina, whole durum wheat semolina (30%), water.
Cooking Time: 15/18 minutes.
