Foglie d’ulivo (Olive Leaves) is an Apulian pasta that takes its name from its shape, which resembles the leaves of an olive tree.
The characteristic green color is obtained by mixing durum wheat semolina and dehydrated spinach flour.
Perfect with mushrooms.
